Ingredients (Makes about 3 dozen cookies)
2 cups flour
1tsp baking soda
1 tsp salt
Melt coconut oil in a small pot using the lowest setting on your stove top. (Do not microwave it!)
While coconut oil is melting combine flour, baking soda and salt in a small bowl.
Using a large bowl stir maple syrup, coconut oil and vanilla extract together. Slowly stir in the dry ingredients above.
Stir in oats, flax and ginger. The batter will really start to thicken at this point. Add the coconut milk and chocolate chips until mixed throughout.
Pre-heat oven to 350 degrees and refrigerate the batter for about 20 mins. The batter will become more like dough as the coconut oil solidifies. This will help you portion out the cookies.
Roll about 1 inch sized dough balls and place on ungreased baking sheet. Bake for 15 minutes and let cool on the hot baking sheet before removing or they will fall apart.
